Hello and welcome!
My name is Noelle and I am absolutely obsessed with food that can fuel the mind, body, and soul.
Self-certified food nerd at your service.
I’ve always been obsessed with food, but my official food nerd journey began when I met my husband in 2013. He shared early on that he had struggled with psoriasis for most of his adult life and at the time was not eating gluten, dairy, eggs, nightshades, chickpeas, or cured meats.
Most rational foodies probably would have run for the hills since he just ruled out all the best categories.
Not this nerd. Challenge accepted.
I’ve had hurdles within my own health journey, but never have I ruled out entire food groups. For me, it was battling cystic acne and discovering I was lactose intolerant. After several dermatologist visits and a round of accutane my acne was under control, but I began to notice flare-ups when my sugar consumption spiked. Awareness and balance was key in keeping my acne at bay. Similar with my intolerance. You see, my father is half French and spent most of his childhood in the Parisian suburbs so cheese is BIG part of our culture. Now as an adult, my fridge is stocked with at least 4-5 different cheeses and I rarely have a negative reaction anymore. Again, awareness and balance. If I could overcome my own hurdles then surely there was a way for me to crack the code and bridge the gap between his diet and mine. Right?!
I started devouring as much as possible about the nutrition world. From books, podcasts, science journals, you name it. I would even ask my doctor during my annual exams questions that were inconclusive based on my research. For anyone familiar with the vast world of science, the more “answers” I came across the more questions I had and the deeper into the research I went.
I began to understand that while some medical professionals have pretty staunch opinions on the superior diet, or food groups to avoid, etc., they are really just the same as us. Interpreting the latest information to make the best possible choices. The primary reason why the world of science and nutrition can be overwhelming and seemingly contradictory through time is because theories are constantly changing as the body of knowledge grows.
We’ve all been there…
Coconut oil is the best. Coconut oil is too high in saturated fats and is not good for your heart. Blue zones eat legumes, so they must be healthy. Avoid legumes at all costs because the lectins cause cancer. Yada yada yada….
Well here’s our take here at The Nourish Theory. Since we are all humans, not robots, we need more than, “eat it because it’s good for you” to make healthy choices. Not to mention what we think is healthy today could vary in a few years. We need more.
We need zest. We need beauty. We need flavor. We need culture.
Learning how to create balanced meals or how to boost nutritional benefits of our kitchen staples will fuel your mind.
Providing your body all its core nutrients so your brain stays sharp, joints stay nimble, and muscles stay strong fuels your body.
Enjoying all (and we mean ALL) the comfort foods without the guilt will fuel your soul.
To truly be healthy, we need to nourish our minds, bodies, and souls equally. That’s my theory.
Each quick and tasty recipe I share will have sections for my fellow food nerds who are interested in learning more about the geeky science-y stuff. You can have the peace of mind knowing that the recipes here are well balanced, delicious, and mostly guilt-free. 😉
So, welcome fellow food nerds to The Nourish Theory.
We are so happy you are here.
